Simple Cocoa Cupcakes




You can probably tell from the haphazard icing that these were a bit of a rushed effort but despite my slightly wonky piping these chocolate cupcakes with pink frosting were super easy to make and pretty tasty too.
I whipped them up to take to a very lovely afternoon tea in the garden at my sister-in-law's house - I am a big fan of meals that consist mostly of cake and cookies...

If you wanted to make some cocoa cupcakes of your own you will need:


85g self raising flour
4tbsp cocoa powder
110g caster sugar
110g softened margarine
2 large eggs
1tsp baking powder
2 tsp milk

And for the buttercream icing:

225g icing sugar
100g soft unsalted butter
1/2tsp vanilla essence
Couple of drops of food colouring

Once you have all of your ingredients all you need to do is...

Preheat the oven to 170C and line your cupcake tin with cases (this makes about 12 cakes).

Sift the flour, cocoa powder and sugar into a bowl and then throw in the rest of the cakey ingredients.
Whisk everything together until pale and fluffy and then spoon your mix into the cupcake cases.

Bake in the oven for around 20mins then leave to cool before icing.

While your cakes are baking pop the icing ingredients into a bowl and beat until fluffy (be sparing with your food colouring and try not to dye your hands red like I did) then pipe or spoon onto your cooled cakes.

Easy peasy!
