Also, in between the boring bits this weekend I did fit in a lovely barbecue with my family. I do like to feed them up when they visit – and I have been trying to stick to my goal of wasting less food – so used some freckly old bananas to make a rather tasty banana loaf. Even used an Easter egg that had been hiding in the cupboard instead of chocolate chips! I’m a changed woman.
If you want to give this recipe a try, you will need:
• Squishy old banana (approx. 100g)
• 1 tbsp milk
• 50g soft butter
• 75gplain flour
• 75g caster sugar
• ½ tsp bicarbonate of soda
• ½ tsp baking powder
• 1 free-range egg
• 50g chocolate chips
Then all you have to do is:
• Preheat the oven to 160C and grease and line a loaf tin
• Mash the banana up and mix together with all the other ingredients (not the chocolate chips)
• Stir the chocolate into the mix and pop into the loaf tin
• Bake for about 45mins
Easy as that! My mum, who isn’t a big cake lover, even took a slice home so definitely worth a try!
